Watermelon, Apple, and Kale Popsicles

If you like watermelon, you will like these popsicles. They take no time to make and only require 3 ingredients. In addition, all the sweetness comes from the watermelon and the apples; no sugar added. Furthermore, these popsicles are rich in nutrients, some of which are the following:

Watermelon: Vitamins A& C, B6 Vitamin, Potassium, Lycopene

Apples: Fiber, Vitamin C, Antioxidant, Potassium

Kale: Vitamins A C & K, Vitamin B6, Folate, Manganese, Potassium, contains ALA, contains more Vitamin C than an orange.


Step By Step Instructions:

Thoroughly wash 2 medium apples and 1 Kale. Also, measure 1 cup of 1 inch diced watermelon.

Note: I left the skin on the apple because it contains nutrients, but it can be peeled as well.


Cut the apples into chunks. For the kale, I removed the stem and piled the leaves on top of one another. Starting from the bottom, tightly roll the leaves upwards and slice it into strips or ribbons. Then, turn it horizontally and cut the strips/ribbons in half.

Place them in a blender and blend until you get a pureed like consistency.

Fill the mixture into ice pop or popsicle molds, place the lids on top of each mold and place it in the freezer. At this point, please refer to your popsicle mold’s instructions. Mine says it takes 8 hours for it be ready.

I use the Koji brand. I got mine from Target.

After 8 hours, I placed each individual mold under running warm water for 30 seconds. This allowed the popsicle to loosen from the mold which allowed for easy removal.

Recipe:

Makes about 12 ounces, which made 4 popsicles.

Ingredients: Organic if Possible

  • 1 cup watermelons, about 1 inch diced
  • 2 medium apples
  • 1 Kale
