Blueberry Mango Smoothie

My kids love smoothies and this recipe has become a household favorite! This smoothie is a tasty and easy way to enjoy fruits, kale, cottage cheese, walnuts, and pumpkin seeds. Furthermore, this smoothie is great to enjoy as part of a snack or with a meal.

I like to allow my frozen fruits to thaw a bit so the smoothie isn’t too cold-it’s not completely thawed, just not too frozen. I have found the smoothie is a bit more flavorful that way as I am not adding more water to help the blender combine the ingredients. Adding too much water can dilute the smoothie which then can take away from its flavor.

 

The smoothie can be served in a bowl with a spoon (as shown here with a Walnut Energy Ball ). Additionally, I topped the smoothie with some granola and blueberries.

Note: blueberries are considered a choking hazard for children under the age of 5. They should be quartered, halved, or mashed. Use caution when serving granola to kids under the age of 5 as the texture can be a bit rough (not soft). As a result, may allow the granola to sit in the smoothie a bit to allow it to soak and soften. Be sure it has softened before serving.

Or, the smoothie can be served in a cup with a straw.

List of Ingredients:

Frozen Wild Blueberries, Frozen Mango Chunks, Frozen Pineapple Chunks, Water, Walnuts, Sprouted Pumpkin Seeds, Cottage Cheese, Kale and a ripe Banana.

 

Step-By-Step Instructions:

 

Add all of the ingredients to a blender.

 

Start the blender off slow while gradually increasing its speed. Blend for about 1.5 to 2 minutes or until it’s well blended and smooth. I like to use the blender’s stick to try and get the ingredients incorporated or to help keep the ingredients moving/blending. If needed, stop and scrape the sides or add a bit more water.

Ingredients

  • 1 ripe banana
  • 1 and 1/2 cups frozen wild blueberries
  • 2 cups frozen mango chunks
  • 1 cup frozen pineapple chunks
  • 1 tablespoon pumpkin seeds
  • 2 tablespoons walnuts
  • 1 cup water (or may use nut/seed/oat milk) , add more if needed
  • 1 kale, stem removed
  • 1/4 cup cottage cheese

Instructions

Add of the ingredients to a high speed blender and start the blender off slow while gradually increasing its speed. Blend for about 1.5 to 2 minutes or until it’s well blended and smooth. I like to use the blender’s stick to try and get the ingredients incorporated or to help keep the ingredients moving/blending.
