Nutritious Walnut Energy Balls

My kids are obsessed with this recipe! Anytime I make these energy balls, they are instantly gone. On one hand, that’s a good thing since this recipe is filled with nutritious ingredients. The walnuts, almonds, and pumpkin seeds each contribute in their own nutritious ways. But what’s great is that walnuts are good for brain health. Additionally, this recipe doesn’t contain any added sugars. The sweetness comes from the dates.

Note: Nuts and seeds are considered a choking hazard for children under the age of 5.

 

 

This recipe is also freezer-friendly. You may prepare some and keep them in the freezer to have for later. Please see below for more details.

 

Step-By-Step Instructions:

The list of ingredients

   

Dates, Walnuts, Almonds, Pumpkin Seeds, Ground Cinnamon, and Ground Flaxseed

Remove the pits from 5 dates, transfer the dates to a glass heat-safe bowl, and add hot water to cover the dates. Allow the dates to sit for 5 minutes.

 

Add the walnuts, almonds, and pumpkin seeds to a food processor and blend until they’re broken down, for about 1-2 minutes (stopping to scrape down the sides when needed).

 

Add the softened dates (without the liquid), ground cinnamon, and ground flaxseed. Pulse until the mixture starts to come together. The mixture should stick together when pressed between your fingers.

   

Use a tablespoon measure to transfer the mixture to your hand. Give the mixture a few squeezes in the palm of your hand to help the mixture stick together. Use both hands to form the mixture into a ball.

Enjoy immediately or keep them in the refrigerator until ready to serve.

To Freeze:

Arrange the energy balls in a single layer in a freezer-safe container.

Image on right: place wax paper or parchment paper in-between each layer before stacking.

Once the energy balls have been arranged, cover the container with a lid and flash-freeze for about 1-2 hours.

Transfer the energy balls to an airtight container or to a freezer-safe bag (try to release as much air as possible to prevent freezer-burn) and keep in the freezer.

When ready to eat them:

Place the energy balls in the refrigerator to thaw overnight.

They’re ready to eat once they’ve completely thawed.

The Walnut Energy Balls can be served on their own or as a side with your favorite snack and/or meal.

Ingredients

  • 1 cup walnuts
  • 1/4 cup pumpkin seeds, I used sprouted pumpkin seeds
  • 1/2 cup almonds
  • 5 medjool dates, pits removed
  • 1/4 teaspoon ground cinnamon
  • 1 tablespoon ground flaxseed

Instructions

  1. Remove the pits from the dates, and transfer the dates to a glass heat-safe bowl. Add hot water to cover the dates, and allow them to sit for 5 minutes to soften
  2. In the meantime, add the walnuts, pumpkin seeds, and almonds to a food processor and blend until the ingredients are broken down (about 1-2 minutes, stopping to scrap down the sides when needed). See picture above. 
  3. Carefully add the softened dates-without the liquid, being careful of the hot water. Also add the ground cinnamon and ground flaxseed. 
  4. Pulse until the mixture starts to come together and sticks together when pressed between your fingers. 
  5. Carefully remove the blade. 
  6. Use a tablespoon measure to transfer the mixture to your hand. Give the mixture a few squeezes in the palm of your hand to help the mixture stick together. Use both hands to form the mixture into a ball.
  7. Enjoy immediately or keep in the refrigerator until ready to serve.
