Nutritious Walnut Energy Balls

With only 6-ingredients, these energy balls are easy to make, nutritious, and delicious.

Ingredients

  • 1 cup walnuts
  • 1/4 cup pumpkin seeds, I used sprouted pumpkin seeds
  • 1/2 cup almonds
  • 5 medjool dates, pits removed
  • 1/4 teaspoon ground cinnamon
  • 1 tablespoon ground flaxseed

Instructions

  1. Remove the pits from the dates, and transfer the dates to a glass heat-safe bowl. Add hot water to cover the dates, and allow them to sit for 5 minutes to soften
  2. In the meantime, add the walnuts, pumpkin seeds, and almonds to a food processor and blend until the ingredients are broken down (about 1-2 minutes, stopping to scrap down the sides when needed). See picture above. 
  3. Carefully add the softened dates-without the liquid, being careful of the hot water. Also add the ground cinnamon and ground flaxseed. 
  4. Pulse until the mixture starts to come together and sticks together when pressed between your fingers. 
  5. Carefully remove the blade. 
  6. Use a tablespoon measure to transfer the mixture to your hand. Give the mixture a few squeezes in the palm of your hand to help the mixture stick together. Use both hands to form the mixture into a ball.
  7. Enjoy immediately or keep in the refrigerator until ready to serve. 

To freeze:

  1. Arrange the energy balls in a single layer in a freezer-safe container.
  2. Note: may use wax paper or parchment paper in-between each layer if you need to stack them.
  3. Allow them to flash-freeze for about 1-2 hours.
  4. Transfer the energy balls to an airtight container or to a freezer-safe bag (try to release as much air as possible to prevent freezer-burn) and keep in the freezer.

When ready to eat them: 

  1. Place the energy balls in the refrigerator to thaw overnight.
  2. They’re ready to eat once they’ve completely thawed.
