Pureed Cauliflower with Banana, Kiwi, Collard Greens and Chia Seeds

I had a bunch of ripe bananas and kiwis so I decided to combine them together to make a nutrient rich baby food. This is such a wonderful combination of fruits and vegetables because it is packed with nutrients. Also, it is pretty tasty. My husband and I snacked on it along with our little one.  Better yet, it’s very simple to make.

Note: You may also add some liquid to turn it into a smoothie.

I would recommend this to infants 6+ who aren’t new to solids and are ready for combined pureed foods. When an infant starts off on solids, it is recommended he/she only eat one food at a time for 4 days straight, to not only get used to solids but also this way you will know if your infant is allergic to a certain type of food. The following are some of the nutrients found in this combination:

Cauliflower: Protein, Vitamin C & K, B-6 Vitamin, Calcium, Fiber, Folate

Banana: Rich in Potassium. Contains Vitamin B6, Vitamins A&C, Phosphorus, Magnesium, and are easy to digest for all ages.

Kiwi: Great source of Vitamin C, Vitamins E & K, Fiber, Folate, Calcium, Iron, Potassium, Magnesium

Collard Greens: Vitamins A, C, E, K, Vitamins B1 & B6, Iron, Folate, Antioxidant, Detoxification benefits

Chia Seeds: Protein, Fiber, Omega-3, Calcium, Magnesium, Iron,


Step By Step Instructions:

List of ingredients-organic if possible: 3 ripe bananas, 2 ripe kiwis, about 3 large florets or 2 cups of cauliflower, 2 collard greens and 1 tablespoon of chia seeds.

Thoroughly wash the cauliflower, kiwis and collard greens. Pat them dry.

Add water to a saucepan and place a steam basket over the saucepan making sure the water doesn’t touch the steam basket. Cut the cauliflower into chunks and place it in the steam basket. Cover it with a lid and bring the water to a boil. Once it starts to boil, lower the heat to medium low (or to a temperature where you can still hear a low boil). Allow it steam for 15-20 minutes or until the cauliflower is fork tender.

Allow it to cool.

Preparation:

Kiwi: cut the ends off of the kiwi and peel the skin off. Cut it into chunks.
Banana: Remove the skin and cut it into chunks
Collard Green: Remove the center stem (discard) and tear or cut the leaves into large pieces
Chia Seeds: measure 1 tablespoon.

Add the cauliflower to the blender along with the rest of the ingredients.

Blend everything together until it is well combined and at a puree like consistency.

Note: At this stage, you may add some liquid to get it to a smoothie consistency.

Pour it into glass food storage containers or puree storage containers.

Store it in the refrigerator or in the freezer (using freezer safe containers).
