Apple Beet Cookies

These cookies are nutritious and easy to make. They are soft in texture which makes it easy for little ones to consume. My kids enjoy these as a snack. I must say, I don’t mind snacking on these cookies either 🙂
 

 

Ingredients:

  • 1 cup Oats
  • 1 cup packed Spinach, washed and thoroughly dried
  • 1 cup shredded apples 
  • 1/4 cup shredded beets
  • 1 teaspoon or 1/2 teaspoon ground cinnamon (we like cinnamon so I added 1 teaspoon, but may add 1/2 teaspoon instead
  • 1 tablespoon Flaxseed meal
  • 4 Dates (pits removed and soaked in 1/4 cup of hot water for 10 minutes )

Instructions

Preheat the oven to 350F

To a small bowl add the dates (pits removed), and 1/4 cup of hot water. Let it sit for 10 minutes so they get nice and soft.

Add oats and spinach to a food processor and pulse until the spinach breaks down.

Add the shredded apple, shredded beets, ground cinnamon and flaxseed meal. Blend, scrap down the sides if needed and blend some more till somewhat combined.  Add soaked dates with its liquid to the food processor. Blend/pulse till combined 

Batter will be a bit sticky and wet 

I used a 1 1/2 tablespoon cookie scoop to get the cookies the same size 

I scooped them onto a baking sheet lined with unbleached parchment paper and slightly pushed the top down to flatten them a bit. Bake the cookies for 15 minutes. Remove them from the oven and let them slightly cool on the baking sheet for about 5 minutes. Transfer the cookies to a cooling rack and allow them to cool completely
