Beet Granita, Without the Sugar

Please be aware, the beets may cause the urine and stools to be red in color.

My mother always makes beet juice for us to drink. She juices one beet, 2 apples and  2 carrots in a juicer and just like that the juice is ready. She never adds sugar to it which I love. Instead, she uses the apples and the carrots to provide that natural sweetness. It is so delicious. In addition, it tastes amazing as a granita as well, without the addition of sugar. It is extremely pleasant to consume on those hot sometimes humid days. My toddler, might I add, loves this recipe; whether that’s in a juice form or as a granita. He always wants more!!


Step By Step Instructions

Thoroughly scrub and wash 1 small beet, 2 medium apples, 2 medium carrots under cold water.

Peel the skin and cut the ends off of the beets and the carrots. Remove the core from the apples.

Cut the beets, carrots and the apples into chunks and place them in a blender. Blend it until they have all been blended into finer pieces. Clean the sides of the blender and add 1/4-1/2 cup of filtered water. Blend it until the water has been incorporated with the fruit and the vegetables. The mixture should have the consistency of a puree.

Pour it into a freezer safe glass container. I used a 4 cup square glass container. Cover it with its lid and place it in the freezer for 3 hours.

After 3 hours, remove the lid and scrape it with a fork. It should be of a slushy consistency. If it hasn’t mostly set yet, leave it in for another 30 minutes to an hour.

Scrape it with a fork until it has all been scraped

Place the lid back on and place it back in the freezer for an additional hour.

Remove the granita, and scrape it with a fork once more. At this point the consistency will resemble that of snow. The granita is ready to serve.
