Snowmen Energy Balls

We made these Snowmen Energy Balls and my son loved them. He loves building an actual snowman so these were fun for him too!
In addition, they make for a tasty holiday snack and are a great way to get the kids involved in the kitchen.

Ingredients

  • 1 cup old fashioned rolled oats
  • 1/4 cup no salt added organic creamy peanut butter
  • 2 tablespoons flaxseed meal
  • 3 tablespoons maple syrup
  • 2 large dates soaked in hot water for 5 minutes
  • 2 tablespoons of the liquid from the dates

Instructions:

Add oats and flaxseed meal to the food processor and blend until it’s broken down. Add the peanut butter, the maple syrup, soaked dates and the liquid from the dates. Pulse till comes together and forms a ball.
Form 2 balls (I used a 1 1/2 tablespoon scoop for the body and a 1 teaspoon measure for the head). Coat it with unsweetened shredded coconuts. Add mini chocolate chips for the eyes and buttons, halved pretzel sticks for the hands, shaved carrots (using a vegetable peeler) for the scarf. Add a small amount of peanut butter on top of the body and place the head on it. Place it in the refrigerator to set for 30 minutes.
