Pull-Apart Pizza Bites, using Yogurt Pizza Dough

Pull-apart pizza bites are such a fun and convenient way to serve pizza to kids (and to the family). These pizza bites in particular are quick and easy to make since the dough doesn’t require time to rise (or to proof). Rather, the dough comes together quickly with 4 simple ingredients! Might I add, one of those ingredients is Greek Yogurt, which in turns helps add extra nutrients to this meal.

Filling options:

You may keep it simple with just cheese or add cheese with some finely diced spinach or kale. Another great option is to add some leftover cooked chicken with some cheese. Here, I helped use up some of my leftover turkey meat. I seasoned it with some spices to help add some extra flavor-it turned out tasty!

served with a side of pizza sauce ( or may serve it with marinara sauce), carrots, and cucumbers

WIth only 4-ingredients, this yogurt pizza dough recipe is quick and easy to make.

Ingredients

  • 2 cups all-purpose flour
  • 3 teaspoons baking powder
  • 1 teaspoon salt
  • 1 1/2 cups plain Greek Yogurt

Directions

  • To a large bowl, add the flour, baking powder and salt. Mix with a fork, in a whisking motion, to combine.
  • Add the Greek yogurt and mix with a fork. Finally, use your hands to help bring the dough together.
  • Cover and set it aside to rest a bit while we prepare the filling.

Ingredients

  • 2 tablespoons unsalted butter
  • 1 teaspoon fresh thyme, diced
  • 1 cup shredded leftover turkey meat
  • 2 tablespoons low-sodium chicken broth
  • 1/2 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/4 teaspoon sweet paprika
  • 1/4 teaspoon Italian seasoning
  • small pinch of salt, if needed

Directions

  • Mix the spices (onion powder, garlic powder, sweet paprika, Italian seasoning, and salt) in a small bowl and set it aside.
  • Melt the butter over medium-low heat, in a saucepan. Add the finely diced thyme and saute for a few seconds.
  • Add the shredded turkey. Warm it up for about a minute.
  • Add the chicken broth and the spices. Cook for about a minute.
  • Transfer to a heat-safe glass bowl and set it aside.

This is such a great way to help use up any leftover turkey meat you might have from Thanksgiving. Or may use any of your desired fillings like leftover chicken, or just mozzarella cheese.

Ingredients

  • Yogurt Pizza Dough (see recipe above)
  • Seasoned Turkey Meat Filling (see recipe above)
  • Garlic Butter (see recipe in the “Notes” section below)
  • Mozzarella Cheese, cut into small cubes
  • Parmesan Cheese, for grating over the pizza bites
  • Pizza Sauce for dipping

Directions

  • Preheat the oven to 425F
  • Cut the pizza dough in half
  • Roll each half into a thick log. Then, cut each log into equally sized pieces, about an inch in thickness.
  • Cover the cut pieces with plastic wrap so they don’t dry out.
  • Using your fingers, flatten each piece (a bit) into a round, mainly focusing on the edges.
  • Add a few strips of the seasoned shredded turkey and small-cubed pieces of mozzarella cheese. Pinch the ends closed and roll the dough into a ball.
  • Transfer to a buttered 9-inch square baking dish.
  • Note: May also arrange the pizza bites in a circle, as shown in the picture. Simply butter a baking sheet. Place the serving bowl you would like to use in the center of the baking sheet and arrange the pizza bites around the bowl.Please note, the bowl will help act as a guide for placing the pizza bites around it. The bowl will later hold the pizza sauce for dipping the bites in. Do not place the bowl in the oven.

    Remove the bowl before placing the baking sheet in the oven.

  • Brush the pizza bites with 3 tablespoons of the prepared garlic butter.
  • Bake for about 15-18 minutes or until they’re golden brown.
  • Carefully remove from the oven and carefully top with grated parmesan cheese and shredded mozzarella cheese (about 1 1/2 cups).
  • Bake for an additional 2 minutes or until the cheese has melted.
  • Remove from the oven and (optional) brush with the remaining garlic butter.
  • Once safe to handle, serve the pizza bites on its own, with pizza sauce, or your favorite dip/side.Be careful of the steam when cutting into the bites.
  • Or, carefully transfer to a serving platter. Place the bowl with the pizza sauce (or marinara sauce) in the center and serve.

Garlic Butter Recipe:

  • Add 5 tablespoons of unsalted butter to a saucepan and allow to melt.
  • Add 2 tablespoons of roughly diced garlic, 1/4 teaspoon salt, and 1/4 teaspoon of Italian seasoning. Cook for about 30-40 seconds over medium heat, while stirring it a couple of times.
  • the recipe is ready to use.
