Lunchbox: Maple Cinnamon Oatmeal with Sautéed Apples

My kids like to eat oatmeal and sometimes they request I pack it as part of their school lunch.

Here I cooked the oatmeal last night, transferred it to a glass food container and allowed it to cool before placing it in the refrigerator. In the morning, I transferred the amount I needed to a bowl, added some water to help rehydrate the oats and microwaved it until it was warm. I used the thermos part of the lunchbox to help keep the oatmeal warm.

 

Here’s what’s in their lunchboxes:

🥣 Oatmeal: I used the brand One Degree Organics Sprouted Steel Cut Oats. I cooked the oats the night before and transferred it to a glass food container. I allowed the oatmeal to cool before placing it in the refrigerator. In the morning, I added the amount I needed to a microwave-safe glass bowl and added some water. Then, I placed it in the microwave to help rehydrate and reheat the oatmeal. Once the oatmeal had reheated, I mixed the oatmeal to make sure it’s at the consistency I was looking for (if needed, may add some more water (then stir) to help get it to your desired consistency-reheat for a couple more seconds if needed). Once it was to my desired consistency, I added some ground cinnamon and maple syrup. Mix that in with the oatmeal and transferred it to the preheated thermos. I then topped it with some of my sautéed apples– so good!

💛 Chickpea Energy Bites. My original recipe calls for peanut butter. I swapped it out for Sunflower Seed butter, which still tasted amazing!

🫐 Blueberries and sautéed apples. I made the sautéed apples yesterday and kept them in the refrigerator until I was ready to use them today. Additionally, I heated it up a bit this morning before packing it away. Just make sure the sautéed apples that are packed with the blueberries aren’t hot so the blueberries don’t blister and become mushy.
