Halloween: Spookylicious Jack-O-Lantern

This was so fun to put together, but most importantly, my son really enjoyed snacking on this. For the pumpkin, I combined pureed sweet potato with homemade pumpkin puree and homemade unsweetened applesauce. To give the pumpkin a jack-o-lantern look, I removed the pits from a few Medjool Dates, cut them into the appropriate shapes and set them aside. Next, I lightly ran a knife from top to bottom to give the pumpkin its ridges. Lastly, I carefully placed the cut up dates onto the pumpkin. And, voila, we have our very own jack-o-lantern that is edible, tasty and nutritious. Best of all, I had leftovers so I just combined the ingredients and served them in a bowl with some ground Ceylon cinnamon, may add some maple syrup to it as well and oatmeal if you wish.

Homemade Pumpkin Puree

Ingredients:

  • 1 small pumpkin, I used a Sugar Pumpkin

Instructions:

  1. Preheat the oven to 400 Degrees Fahrenheit
  2. Scrub and clean the pumpkin
  3. Carefully remove the stem
  4. Carefully cut the pumpkin in half from top to bottom
  5. Remove the seeds with a spoon
  6. Place the halves cut side down on a baking sheet lined with unbleached parchment paper
  7. Roast until the pumpkin is fork tender, can take about 30 minutes
  8. Let it cool
  9. Remove the skin, place the pumpkin in the blender or food processor, and blend unit its pureed
  10. Store it in a glass food storage container in the refrigerator.

 

Homemade Unsweetened Applesauce:

Ingredients: (makes about 16 ounces)

  • 2 pounds organic apples, I used Gala Apples
  • 3 tablespoons filtered water
  • 1 tablespoon freshly squeezed lemon juice
  • 1/4 teaspoon ground cinnamon (optional), I like to use Ceylon Cinnamon

Instructions:

  1. Wash, peel and core the apples
  2. Cut the apples into chunks and place them in a pot.
  3. Add the water, lemon juice and ground cinnamon.
  4. Stir and cover it with a lid.
  5. Allow it to cook, stirring frequently, over medium-low heat until the apples are soft, about 15-20 minutes.
  6. All it to cool, place it in a blender and blend until it’s pureed.
  7. Store it in a glass food storage container in the refrigerator.
