Astghik

Hi, I am Astghik! I am so glad you are here. On my page, you will find the meals/recipes I like to prepare for my family. I am a mother to my wonderful son and triplet girls. My name means "little star" in Armenian. I was named after my grandmother who lived with us and prepared fresh, nutritious, and delicious meals for our family. Simultaneously, my mother makes amazing baked goods and salads. I have been so fortune to have experienced both of their culinary skills. My goal is to continue and prepare nutritious meals for my family, as it was for me and my sister. I hope you will join us and try some of my recipes.

How to Cook Quinoa

Here’s how I like to cook my quinoa. For the liquid, may use filtered water, chicken broth or vegetable broth.

Ingredients:
▪️1 and 1/2 cups quinoa , rinsed well
▪️2 1/2 cups filtered water or low-sodium chicken broth 
▪️1 teaspoon salt 

Instructions:
1️⃣ Measure and rinse quinoa really well.
2️⃣ Add water or broth and quinoa to a small saucepan over medium heat. 
3️⃣ Bring the mixture to a boil.
4️⃣ Once it boils, add 1 teaspoon salt and stir.
5️⃣ Bring mixture back up to a boil, give it a final stir, cover with a lid, lower the heat to low and simmer 20 minutes. 
5️⃣ turn the heat off, without removing the lid, let it sit off the heat  for 15 minutes. Or may also place a paper towel under the lid to help catch the moisture. Let it sit covered.
📝Note: The longer it sits (covered), the fluffier it will become 
6️⃣Fluff with fork and serve.

Watermelon Granita

This Watermelon Granita is delicious and so refreshing. It’s such a tasty treat for those hot summer days! 

Ingredients:
🍉 4 cups cubed watermelon
🍉 1 1/2 cups orange juice, I used pure orange juice that’s not from concentrate 
🍉 1/4 cup freshly squeezed lime juice
🍉 2 tablespoons pure maple syrup 

Method:
Cut the watermelon into chunks, measure 4 cups, and place them in a blender. Also add the orange juice, lime juice, and maple syrup .
Blend until the mixture is smooth.
Pour it into a glass freezer-safe container ( I used a 8 cup container that is freezer safe or may also use a 9x13 glass container). Cover it with its lid and place it in the freezer for 3 hours.
Following the process below:
1-After 3 hours, remove the lid and scrape it with a fork (focusing on the corners as well). It should be of a slushy consistency. Place the lid back on and put it back in the freezer for an additional hour.
2-Remove from the freezer and scrape it with a fork, making sure to mash any large chunks. Also, focusing on scraping the corners as well. Place it back in the freezer for another hour.
3-Remove from the freezer and scrape it with a fork, making sure to mash any large chunks and don’t forget the corners again. Place it back in freezer for another hour.
4-Scrape with fork, serve and enjoy!

Continue this process until it’s at the consistency you prefer-(either slushy like consistency or that of shaved ice).

Note: if it sits in the freezer overnight or longer remove it from the freezer and allow it to sit at room temperature for a few minutes or until you can scrape it with a fork.

Banana Spinach Nice Cream

Here’s a nutritious and tasty way to enjoy a cool treat. I’ve been making this recipe for a few years now. It’s easy to make and tastes like bananas (you can’t even taste the spinach)!
Just be sure to freeze some bananas before-hand so you have it ready for this recipe.

We topped our Spinach Nice Cream with some dye-free sprinkles 💗

Ingredients
🍌3 frozen bananas
🍌1/2 cup packed spinach
🍌1/4 teaspoon ground cinnamon (optional)

Instructions:
Add all the ingredients to a high speed blender or food processor (I used a food processor). Blend till smooth and resembles ice cream. Transfer to a freezer-safe glass container (I used a 2 cup glass container) and let it freeze for an hour. Scoop it out onto a bowl or ice cream cone and enjoy.

Baked Banana Boats

These Banana Boats can be baked in the oven or roasted over a campfire. They are fun to make and very versatile in that you may add any of your favorite ingredients. For my banana boats, I used ground flaxseed, ground cinnamon and semi-sweet mini chocolate chip. They turned out delicious!
 
You can make as many banana boats as you’d like. Here, I’ve included the recipe for 1 banana boat.

Ingredients
🍌1 banana, make sure it’s not green and somewhat ripe
🍌1/2 teaspoon ground flaxseed
🍌Sprinkling of ground cinnamon
🍌1 teaspoon semi-sweet mini chocolate chips 

Note: add more or less of these ingredients depending on the size of the bananas

Method:
Remove any stickers/ items or objects that might be on the banana but leave the skin on.
Split the top part of the skin on the banana lengthwise making sure to leave the ends untouched. 
Open the skin slightly so you can fill the toppings.
Coat it with the ground flaxseed, sprinkle some of ground cinnamon, and add the semi-sweet mini chocolate chips.

Wrap the entire banana (including the stem) in aluminum foil making sure to nestle it down on the bottom so it sits up straight on its own.
Transfer it to a baking sheet lined with parchment paper and and bake in a preheated 350F oven for 15 minutes or roast it over a campfire for a few minutes or until the chocolate is melted and the banana is soft.

Be careful of the aluminum foil as it might be hot. Allow it to cool, undo the aluminum foil being careful of any steam that might arise. Mash and mix the banana with a fork to help combine the ingredients. Allow it to cool and enjoy.

Blueberry Peach Crisp, easy kid’s snack

It’s peach season and I loveeee peaches. Here’s is an easy and delicious Blueberry Peach Crisp recipe that my family and I enjoy. The crisp topping isn’t like the traditional recipe but it’s still delicious!

The Blueberry Peach Filling
🫐2 pounds of peaches (about 5 peaches)
🫐1 pint blueberries
🫐1 tablespoon filtered water
🫐2 tablespoons freshly squeezed lemon juice
🫐2 tablespoons maple syrup, add more or less depending on how sweet your fruit are.
🫐1/4 teaspoon ground cardamom or ground cinnamon

The Topping
🍑 1 cup old-fashioned rolled oats
🍑1/4 cup flaxseed meal
🍑1 teaspoon ground cinnamon
🍑3 tablespoons maple syrup, add more or less depending on your preference
🍑2 tablespoons oil, I used avocado oil

Method:
🔸Preheat the oven to 350 F
🔸Wash the peaches and blueberries.
🔸Remove the pits from the peaches and cut the peaches into small pieces.
🔸Transfer the peaches and the blueberries to a bowl.
🔸Add the lemon juice, water, maple syrup and ground cardamom to the bowl.
🔸Toss to evenly coat and mix.
🔸Transfer them to a greased 8-by-8 inch squared baking dish
🔸 Set aside to make the topping

Topping
🔹To a bowl, add the oats, flaxseed meal, and ground cinnamon.
🔹Mix to combine.
🔹Add the maple syrup and oil. Mix to combine.
🔹Spoon it over the fruit mixture and spread it out evenly.
🔹Bake it in the oven for 40 minutes or until the mixture is bubbling.
🔹Let it cool and serve.

Note: the filling might have some liquid from the fruits. Mixing the oat topping with the liquid will allow the oats to absorb some of that liquid. Which will also help flavor the oats even more!

🔹May serve it on its own, with some ice cream or some whipped cream.
🔹Transfer the rest to a glass food storage container and keep it in the refrigerator. As the oats sit, they will get soft. We enjoy ours that way too-it still tastes good!

These muffins are moist, fluffy, and delicious! Additionally, I topped the muffins with a cinnamon streusel topping. The streusel pairs so nicely with these muffins. 

To macerate the peaches:
▪️1/2 cup small diced peaches
▪️1 tablespoon sugar
▪️1 teaspoon filtered water
Add all of the ingredients to a small bowl. Mix and allow to sit for 20 minutes

While that sits , get the batter ready…

▪️1 3/4 cups all purpose flour 
▪️2 tablespoons ground flaxseed 
▪️3/4 cup sugar
▪️1 teaspoon baking powder
▪️1/2 teaspoon baking soda
▪️1/4 teaspoon salt
▪️1 teaspoon ground cinnamon 
▪️4 tablespoons unsalted butter, melted
▪️2 large eggs
▪️1 tablespoon pure vanilla extract 
▪️1/2 cup plain yogurt 
▪️1/2 cup milk

Easy Dinner, Crispy Baked Tacos

My kids enjoy eating tacos, so easy meals like these tacos are a go-to here.
Please feel free to add any fillings you’d like.
Note: I like to use shredded cabbage because of its fiber and nutritious benefits.

Homemade Taco Seasoning Ingredients:
🌮2 teaspoons chili powder
🌮1/2 teaspoon garlic powder
🌮1/2 teaspoon onion powder
🌮1/4 teaspoon dried oregano
🌮1/2 teaspoon paprika
🌮1 1/2 teaspoons ground cumin
🌮1/2 teaspoon salt
🌮1/4 teaspoon of ground black pepper

Taco Ingredients:
🌮1/3 cup filtered water
🌮 1 tablespoon tomato paste
🌮1 pound ground beef , I used grass-fed
🌮 Flour Tortillas
🌮 Shredded Monterey Jack cheese
🌮 avocado oil

Method:
Preheat the oven to 425F
Prepare the seasoning mix by adding the spices to a small bowl. Mix to combine and set it aside.
Prepare the liquid- measure 1/3 cup of filtered water and add 1 tablespoon tomato paste. Mix to combine. Set it aside. 
Heat a skillet over medium heat. Add the ground beef and cook it by stirring and breaking it apart into small pieces . Cook the beef until it is completely cooked through. Drain and discard any excess grease.
Add the taco seasoning. Toast for about 30 seconds to a minute, mixing couple times. Add the water/tomato mixture. Mix and cook for about a minute or until most of the liquid has evaporated. Turn heat off and set it aside.
Spray one side of the tortilla with avocado oil. Flip over (spray side down).
Add 2 tablespoons of shredded cheese on one half of tortilla 
Top with 1.5-2 tablespoons meat mixture 
Top meat mixture with 2 tablespoons shredded cheese.
Fold tortilla in half and transfer to baking sheet. (Might need to hold it down a bit for the tortilla to hold its shape).
Bake 7 minutes  or until bottom golden brown. 
Carefully turn each taco. Bake 3-4 more minutes or until golden brown. Allow to cool down a bit. Carefully open the taco and add desired fillings. 
For kids- they like it simple with sour cream and shredded cabbage.
To ours I added oven roasted red bell peppers, shredded cabbage and sour cream. 
Served with homemade guacamole, lime and sour cream.

Grilled Naan Pizza

Here’s a quick and easy way to make pizza. And not only does it take less than 10 minutes to cook but it’s also delicious!

This recipe may be prepared outdoors over a grill or cooked in the oven. I also added cooked and diced chicken to my recipe for some protein and finely diced spinach for extra nutrients.

You may use any toppings you wish. Here are the ingredients I used to build my pizza.

Ingredients:
▪️store-bought Naan bread
▪️avocado oil, to brush over the bread
▪️pizza sauce 
▪️finely diced spinach 
▪️oven-roasted chicken, may cook your own chicken separately, use leftovers, or use store-bought rotisserie chicken 
▪️shredded mozzarella cheese

Method:

Preheat grill to 400F with direct heat on one side and indirect heat on the other side. 

Brush both sides of the Naan bread with avocado oil
Place Naan bread on direct heat and cook for about 1 minute on each side or until you get nice grill marks.
Place grilled Naan bread on indirect heat and add desired toppings. I spread pizza sauce, added finely diced spinach, cooked and small diced (or shredded) chicken, and shredded mozzarella cheese. Cover and allow to cook for 5-10 minutes or until the cheese has melted.
Remove, cool and cut into desired pieces. 

To cook the pizzas in the oven:

Preheat oven to 400F
Sprinkle naan bread lightly with water. 
Place Naan bread on baking sheet lined with parchment paper. 
Place on middle rack and bake for 2 minutes. Carefully remove it from the oven. 
Add desired toppings. Place back in the oven and bake for 5 minutes or until cheese has melted. 

Served with tri-colored bell peppers, quartered cherries and quartered grapes.

Quick and Easy Lunch, Scrambled Eggs with Spinach 

As a kid, my favorite way to eat scrambled eggs was with cheese. My mom would use whatever cheese we had home, which was usually either Feta cheese or Bulgarian Cheese. Here I used “Piknik” cheese or may leave that part out. 

Ingredients:
▪️1 tablespoon unsalted butter
▪️1 garlic, minced 
▪️1/2 cup baby spinach, (washed well and patted dried)
▪️some cheese, I used Piknik cheese
▪️2 large beaten eggs
▪️1/8 teaspoon salt, don’t add too much if adding cheese since cheese can already be salty

Method:
▪️Add 1 tablespoon butter to a heated skillet over medium heat and allow it to melt 
▪️add the garlic and sauté for 20 seconds. 
▪️add the spinach and mix until it starts to wilt, this will happen quickly. 
▪️add the crumbled cheese and mix
▪️add the beaten eggs and salt. Scramble until cooked through. 
Serve

Served with sauerkraut and bread

Spinach Cookies, easy to make and only 4 ingredients.

I remember wanting a nutrient-dense snack for my son (who was a young toddler then) with a leafy green. I couldn’t find one so I created my own. I recall when I first started recipe testing for these cookies, I wanted the cookies to contain spinach and to have a nutritious flour base. As a result, I went with almond flour. After many attempts, this was the recipe I came up with. 

Ingredients:
🍪1 1/2 cups almond flour
🍪1 cup packed spinach, washed and thoroughly dried
🍪2 tablespoons maple syrup
🍪2 tablespoons of oil, I used avocado oil

Instructions:
Preheat the oven to 350 F.
To a food processor, add the almond flour and the spinach. Pulse or blend until the spinach is cut into fine pieces. Transfer the almond flour/spinach mixture to a bowl and set it aside.
To prepare the wet ingredients, add the oil and the maple syrup to a small bowl. Using a fork, whisk until combined. Add the oil/maple syrup mixture to your dry ingredients. Stir with a fork or a spoon until the mixture comes together. The dough should stick together when pressed between your fingers and not fall apart.
Line a baking sheet with unbleached parchment paper. Using a spoon or a cookie scoop, add 1 1/2 tablespoons of the cookie dough to the baking sheet.
Squeeze a couple times to bind and form it into a cookie. Then transfer to the baking sheet.
There aren’t any leveling agents in these cookies so the thickness of the cookies depends on how they are formed. Bake for 12-15 minutes (depending on the size of the cookies) or until they are done and the bottom of the cookie starts to turn a golden color.
Transfer them to a wire rack to cool.
Enjoy.

Mango Nice Cream:

This nice-cream only requires 3 ingredients and doesn’t contain any added-sugars.

To help make this nice cream fun for my kids, I provided my kids with different toppings to choose from; they loved that so much!

Ingredients:
🧡1 frozen ripe banana, can use frozen or fresh (it doesn’t need to be frozen) 
🧡1 1/2 cups frozen mango chunks 
🧡1 cup frozen pineapple  

Method:

Add all the ingredients to a food processor (allow it to sit for about 5 minutes or so to help thaw it out a bit. This will allow it to blend easily ). Blend for about 1-2 minutes (while scraping down the sides-when needed) or until it’s smooth and combined. Can serve immediately or transfer the nice cream to a glass food storage container that’s freezer safe and let it sit in the freezer for 2 hours. This allows it to firm up even more. Remove it from the freezer a few minutes before serving just to allow it to soften a little bit for easy scooping. Use an ice cream scoop to serve the nice cream.

Topping options:
▪️colorful dye-free sprinkles 
▪️quartered blueberries 
▪️quartered blackberries 
▪️diced strawberries

Mango Nice Cream: This nice-cream only requires 3 ingredients and doesn’t contain any added-sugars. To help make this nice cream fun for my kids, I provided my kids with different toppings to choose from; they loved that so much! Ingredients: 🧡1 frozen ripe banana, can use frozen or fresh (it doesn’t need to be frozen) 🧡1 1/2 cups frozen mango chunks  🧡1 cup frozen pineapple  Method: Add all the ingredients to a food processor (allow it to sit for about 5 minutes or so to help thaw it out a bit. This will allow it to blend easily ). Blend for about 1-2 minutes (while scraping down the sides-when needed) or until it’s smooth and combined. Can serve immediately or transfer the nice cream to a glass food storage container that’s freezer safe and let it sit in the freezer for 2 hours. This allows it to firm up even more. Remove it from the freezer a few minutes before serving just to allow it to soften a little bit for easy scooping. Use an ice cream scoop to serve the nice cream.
