This is one of my favorite dip/spread recipes. The avocado provides nutrients and helps add a creamy texture to this recipe. The chickpeas offer great nutrients to this recipe as well but it doesn’t overpower it either. To me, this tastes like guacamole but is upgraded to be even more nutritious all thanks to the chickpeas. It’s delicious and nutritious, which is a total win for me.

I served it to my kids in sandwich form as a spread but it also tastes delicious as a dip with veggies, crackers or chips.




I asked my kids to pick out a character Grip Dish. They wanted Minnie Mouse, Unicorn, Dinosaur and The Toy Story Alien Grip Dishes. These fun Grip Dishes are by Bumkins.
They each also picked out the sandwich cutouts and the colored sticks (unicorn, mermaid, dump truck, and hearts). These are by The Lunch Punch.
All of these items helped make their mealtime fun!

A delicious and nutritious spread consisting of avocados, chickpeas, and spinach. I have also added some freshly squeezed lemon juice and sauteed onions with garlic for some extra flavor.

Ingredients
- 1 tablespoon oil, used avocado oil
- 1/2 onion, diced
- 1 garlic clove, minced
- 13 or 15 ounces of chickpeas, drained and rinsed- I used no salt added
- 2 ripe hass avocados, diced
- 1 cup packed spinach
- 1/2 cup packed cilantro
- 2 tablespoons lemon juice
- Salt to taste (about 1/4-1/2 teaspoon of salt- I added about 1/2 teaspoon )
Instructions
- Add oil to a saucepan over medium heat and allow it to get hot.
- Add the onion and cook it for about 2-3 minutes, stirring occasionally.
- Add the garlic and cook for about 20 seconds. Turn the heat off and set it aside.
- To a food processor, add the chickpeas, avocados, spinach, cilantro, lemon juice, salt and the sautéed onions with garlic. Blend until it’s combined.
- Transfer mixture to a bowl to serve.
- Storage: place in a glass food-safe storage container, smooth out the top, cover the surface flat with plastic wrap (making sure the plastic wrap is touching the avocado spread). Store it in the refrigerator.
Notes
- May leave the salt out, if desired. Add the prepared ingredients to the food processor, but leave the salt out. Blend the mixture in the food processor until it is smooth and combined. May store this mixture without the salt, or may separate it into 2 separate containers-one with some added some and one without the salt.
